Cupcake Experiment #10 – Mocha Cupcakes with Sticky Fudge Frosting

For Eamon’s Birthday, he requested something Mocha.  Done and Done.  I’m not the biggest fan of coffee flavored things, but this one is subtle enough that I still ate a cup of frosting.  The cake is a cross between devils food and brownie.  Pretty darn good.  The icing definitely takes patience, wait for it to cool!!  I didn’t.

Makes 12

Mocha Cupcakes

Preheat oven to 350

  • 3/4 cup flour
  • 1/2 cup unsweetened cocoa powder, sifted
  • 1 tablespoon finely ground coffee
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • Pinch of Salt
  • 1 cup granulated sugar
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 2 tablespoons instant coffee granules
  • 1 teaspoon vanilla
  1. Sift together flour, cocoa, coffee, baking powder, baking soda, and salt.
  2. Whisk together sugar, oil and egg until smooth, add flour mixture and mix until blended.
  3. Whisk together milk and coffee, add to batter and beat until smooth.
  4. Divide into cups and bake for 20-25 min until tops of cupcakes spring back when lightly touched.  let cool before frosting.

Sticky Fudge Frosting

  • 2 oz unsweetened chocolate, chopped
  • 2 tablespoons unsalted butter, room temp
  • 1 14oz can fat free sweet condensed milk
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla
  • instant coffee to taste
  1. Put coffee (i ended up with 1 tablespoon), butter, condensed milk, chocolate, and salt in a double boiler, stir contantly for 5 min .  Remove from heat and stir in the vanilla.
  2. Pour mixture into a large bowl and with an electric mixer, beat until cool and thickened.  ( I did this for quite a while)
  3. Ice immediately, it will be runny. Let them sit for a while until the icing hardends
