Day 3: Chocolate cupcakes, salted caramel icing with candied bacon


You may or may not have a heart attack after these.  I think these win the competition so far.

Chocolate Cupcakes

made 9 (from the book Cupcakes!)

  • 3oz unsweetened chocolate, chopped
  • 1/2 cup flour
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 1/4 cup butter
  • 3/4 cup sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 1/4 cup sour cream
  • 1/4 cup water

Preheat oven to 350.

Melt chocolate over double boiler, set aside to cool.

Mix flour, baking powder, baking soda, and salt.

With a mixer, beat butter and sugar until smooth/fluffy, about 2 minutes.

mix in the melted chocolate, then the egg, then add the vanilla.  Beat it until it looks a few shades lighter, about 1 minute.

On low speed add the sour cream, then the flour, then water until smooth.  This batter fluffs up quite a bit.

divide into cups and bake for about 20-25 minutes, don’t overload the cups or you’ll have a mess on your hands.

Salted Caramel Icing

I kind of made this one up, so if you try to make it and it doesn’t work out, its because i made up the recipe just now.

  • 1/4 cup sugar
  • 1 tbs water
  • 1/8 cup heavy whipping cream, plus more for random addition
  • 1/2 tsp vanilla
  • 6 tbs butter
  • 1/2 tsp kosher salt
  • 1 cup powdered sugar

Stir together granulated sugar and water in a small saucepan, heat until it is bubbling and turning a golden brown amber.  remove from heat….don’t touch it!  I burned the crap out of my finger, don’t know why i thought boiling sugar wouldn’t be hot.

Stir in the cream and vanilla, then let cool off for about 30 minutes.

In a standing mixer, combine butter and kosher salt, beat until light and fluffy. Reduce speed and add the powdered sugar.

Stop, scrape the bowl, then add the caramel.  Beat on medium speed while adding a little of the heavy whipping cream so that it makes the frosting lighter and fluffier.

Candied Bacon

  • 6 slices of bacon
  • 1/2 cup Demerara sugar
  • 1 brown paper bag

Cook the bacon however you want.

Place the sugar in a small frying pan over medium heat.  Place the bacon on top and as the sugar starts to melt turn the bacon so everything gets covered.  This whole process probably takes about 5 minutes.

Remove the bacon and put it on the paper bag and let it cool.

Then chop it up and put it in the icing!!!  Reserve some to sprinkle on top for garnish.
