Day 5: Pear & Hefeweizen Cupcakes w Hefeweizen/Almond icing
DANG. That’s a lot of stuff. I’m noticing a trend here. Apparently alcohol belongs in cupcakes. Because it is good.
Pear & Hefeweizen Cupcakes
- 1 1/4 cups flour
- 3/4 teaspoons baking soda
- 1 pinch salt
- 1/2 cup butter
- 1 cups sugar
- 2 eggs
- 1/2 teaspoon vanilla
- 2 pears, peeled (firm but ripe, cored and grated)
- 1/2 cup Hefeweizen
Preheat oven to 350
Sift together flour, baking soda & salt. Set aside.
In mixer, beat butter and sugar until light and fluffy. Add eggs 1 at a time, make sure they are well incorporated.
Slowly add flour mixture.
Stir in the Vanilla & Hefeweizen
Stir in the pear
Divide into 12 cups and bake for about 20 min.
Again, I kind if made this one up so just eyeball it and keep tasting.
- 1 stick of butter
- 1-2 cups powdered sugar
- Hefeweizen about 1/4 cup
- 1 tsp vanilla
- 1 cup sliced almonds
Beat together the butter powdered sugar, and vanilla, keep an eye on the consistency. Begin to add in the beer little by little with the mixer on high speed. If the frosting starts getting runny add more sugar.
Mound the frosting on the cupcakes and then roll them in the sliced almonds to coat.
