Day 8: Sweet Potato Cupcakes aka Leftover Cupcakes

Keith made his Grandmothers sweet potatoes and they were delicious. So, why not put them in a cupcake?????  Not sure how one would replicate this recipe exactly how I did it, but use your favorite candied yam recipe and it should do the trick. I provided a similar one I found online.  Just make sure to puree everything before putting it into the batter.  These were ridiculously moist and the marshmallow on top instead of frosting was the perfect touch, it was like thanksgiving in a cupcake.

Sweet Potato Cupcakes

makes 6-9

  • 3/4 cup flour
  • 3/8 tsp baking powder
  • 3/8 tsp baking soda
  • 1/8 tsp salt
  • 3/4 cup sugar
  • 1/4 cup veggie oil
  • 1 egg
  • 1/2 cup Candied Sweet Potatoes

Mix together flour, baking powder & soda and salt

In an electric mixer, whisk together sugar, oil and eggs until smooth.  Mix in the sweet potatoes until fully incorporated.  Add in the flour mixture, beat until smooth.

Fill cups 3/4 full.  Bake at 350 for 25 min.  When done, remove from oven and turn on the Broiler.  Place 1 marshmallow on top of each cupcake.  Put under the broiler for 1-2 minutes.  Keep a close eye on it or else you’ll have some burnt cupcakes on your hands.
