Day 12: Apple Crisp Cupcakes with Cream Cheese Frosting

Oh man, I burned the crap out of my mouth with these bad boys.  It was like eating a hot pocket.  I couldn’t help it.  They are good.

Apple Crisp Cupcakes


  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup sugar
  • 1/2 cup unsalted butter melted and cooled slightly
  • 2 eggs
  • 1/2 tsp vanilla
  • 1/3 cup milk
  • 1 granny smith apple peeled and diced


  • 3/4 cup packed light brown sugar
  • 1 tsp ground cinnamon
  • 3 tbsp unsalted butter room temp
  • Pinch of salt

In a small bowl mix flour, baking powder and salt

In a stand mixer, mix together sugar, butter, eggs and vanilla until smooth. Mix in milk and flour mixture until smooth.  Stir in the apple.

In a bowl whisk together brown sugar and cinnamon. Add butter and knead in with your fingers until its all crumbly.

Scoop about half the batter into cups, sprinkle the streusel over then cover with the remaining batter.

Bake for 25 minutes and let cool.


  • 4 oz cream cheese
  • 1/2 cup unsalted butter
  • pinch of salt
  • 2 cups powdered sugar

Mix it all together until light and fluffy.  About 5 minutes.
