Day 13: Chocolate Gingerbread w Cream Cheese Frosting
I’m so over white frosting. So here’s a holiday themed cupcake to get everyone started for the pending eat-o-thon that is xmas. I’ll make something for you jews out there very soon.

Chocolate Gingerbread Cupcakes
- 1 1/4 cups flour
- 1/2 cup unsweetened cocoa, sifted
- 2 tsp ground ginger
- 1 tsp cinnamon
- 3/4 tsp baking soda
- 1/4 tsp allspice
- 1/4 tsp salt
- 1 cup sugar
- 1/3 cup veggie oil
- 1 egg
- 1 tsp vanilla
- 3/4 cup buttermilk
- 1/2 cup semi sweet chocolate chips
- 1/3 cup rasins or currants (i used currants)
Mix together flour, cocoa, ginger, cinnamon, baking soda, allspice and salt in a small bowl
With a mixer, mix sugar, oil, egg and vanilla untul smooth. Mix in flour mixture and buttermilk until smooth. Stir in chocolate chips and currants. This batter will be pretty watery, don’t be scared.
Bake at 350 for 25 min. Cool Completely
Cream Cheese Frosting
- 4oz cream cheese
- 1/2 cup unsalted butter
- pinch of salt
- 2 cups powdered sugar
Mix it all together until light and fluffy.
