Day 19: Spiced Peaches and Cream


 

These are great for something a bit lighter.  Some of those chocolate ones can be a bit of a gut bomb.

Spiced Peach Cupcakes

  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 1/4 tsp salt
  • 1 cup sugar
  • 1/2 cup unsalted butter
  • 2 eggs
  • 1/3 cup milk
  • 3/4 cup sliced canned peaches well drained

In a small bowl, mix together flour, baking powder, cinnamon, allspice and salt.

In a large bowl, whisk together sugar, butter and eggs until smooth. Alternately whisk in flour mixture and milk beating until smooth. Stir in the peaches.

Divide batter and bake at 350 for 22-27 minutes.

Cream Cheese Frosting

  • 4 oz cream cheese
  • 1/2 cup unsalted butter
  • pinch salt
  • 2 1/4 cups powdered sugar

Beat together everything but the powdered sugar until smooth.  Increase speed and add in sugar until light and fluffy.
