Day 21: John Gardner Breakfast Cupcakes


I had some great helpers this weekend. John’s one request was a breakfast cupcake.  So here’s my attempt.  They weren’t half bad, but I would recommend throwing some maple syrup over the top for even more breakfast goodness.

Breakfast Cupcake

  • 1 1/2 c. all-purpose flour
  • 1/2 c. cornmeal
  • 1/3 c. packed brown sugar
  • 1 Tbsp. baking powder
  • 1 tsp. baking soda
  • 1/8 tsp salt
  • 1/2 c. plain nonfat yogurt or buttermilk
  • 1/4 c. milk
  • 2 Tbs. vegetable oil
  • 2 eggs
  • 1 egg white
  • 1/2 bulk breakfast sausage
  • 1 apple sliced thin ( I like honeycrisp or fuji)
  • 1/2 cup chopped kale

Coat cups of muffin tin with nonstick spray

Combine flour, cornmeal, brown sugar, baking powder, baking soda and salt in a large bowl.

Combine yogurt, milk, oil, eggs, and egg white in another bowl. Set aside

Brown sausage in a skillet about 5 min. remove and drain on paper towel.

Stir sausage, apple and kale into flour mixture and add yogurt mixture. Stir just until combined; mixture will be slightly lumpy.

Bake at 35o until toothpick comes out clean.

Cream Cheese Frosting

  • 4 oz cream cheese
  • 1/2 cup unsalted butter
  • pinch salt
  • 2 1/4 cups powdered sugar

Beat cream cheese, butter and salt together until smooth.  Slowing beat in powdered sugar until light and fluffy.
