Day 23: Chocolate Cheesecake Cupcakes
- 12 oreos
- 3 oz semi sweet chocolate
- 1 oz unsweetened chocolate
- 12 oz cream cheese
- 1/2 cup granulated sugar
- 1/4 cup sour cream
- 1 tbsp instant coffee
- 2 eggs
Place 1 oreo in the bottom of each liner and set aside.
in a microwave safe bowl, combine chocolates. Microwave, uncovered, on high for 50 seconds, stirring after 30 seconds or until almost melted. Set aside to stir lightly.
In a mixer with a squeegee blade, if you have one, or food processor mix cream cheese until smooth. Add sugar, melted chocolate and mix until smooth. Add sour cream and coffee blending well. Add eggs, mix until just smooth, don’t over process.
Scoop batter into cups. Bake for 22 minutes at 350 or until centers are firm. Let cool before trying to remove from the pan.
