Day 29: Chocolate Chili Cupcakes

I have to admit, it was a bit of a drag to make these after my holiday party extravaganza.  But I’m 1 away from being done with the challenge!

I thought these were going to be really strange, but in reality the chocolate compliments the chili really well.  There’s just a small kick at the end.  Really good.  I’d experiment with different kinds of chili if you really like these.

Chocolate Chili Cupcakes

  • 1 1/4 cups flour
  • 1/2 cup cocoa powder
  • 1 tbsp chili powder
  • 2 tsp ground coffee (i used less)
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup sugar
  • 1/4 cup veggie oil
  • 1 egg
  • 1tsp vanilla
  • 3/4 cup buttermilk
  • 1 tbsp instant coffee
  • 1/2 cup chocolate morsels

In a small bowl mix together dry ingredients.

In a large bowl wisk together sugar, oil, egg and vanilla until smooth. In a separate bowl stir together buttermilk and instant coffee.

Whisk in flour mixture and buttermilk into the oil mixture, beating until smooth.  Stir in the chocolate chips.

Bake at 350 for 22-25 minutes.  The tops of these will crack a little bit like muffins.

Chocolate fudge frosting

  • 1 1/2 cups powdered sugar
  • 3/4 cup cocoa sifted
  • 1/2 cup butter room temp
  • 2 tbsp milk
  • pinch salt

Mix all ingredients together until smooth.
