Oreo Cupcakes
After quite a few days off, Keith’s sister Ida got me back into the swing of things with not 1 but 2 cupcakes. I totally forgot to take pictures of the 1st one, so I’ll keep it a secret until a later date when I try to make it again.
I was thinking these oreo delivery devices were going to be a bit crazy, but they turned out to be pretty delicious. They had just the right amount of sweetness, crunchiness and familiarity that makes them a must try for any oreo fan. We also had some golden oreos on hand, but decided against tainting the recipe, but could be an interesting option for the more adventurous.

Oreo Cupcakes

- 1 stick unsalted butter, at room temperature
- 1 cup milk
- 2 tsp vanilla extract
- 2 1/4 cups flour, plus 2 tbsp
- 1 tsp baking powder
- 1/2 tsp salt
- 1 2/3 cup sugar
- 3 large egg whites, at room temperature
- 1 package Oreo Cookies (about 45 cookies)
Preheat over to 350F. Line 24 cupcake tins with paper liners. -Note- Maybe use foil liners, as our oreos stuck to the paper.
Twist apart 24 Oreos. Place the cookie with filling on it, filling side up, in the bottom of each cupcake pan. Cut 12 of the filling-less cookies in half for garnish, and crush the others in a plastic bag with a rolling pin to make fine crumbs. Reserve these crumbs to mix into the frosting.
Roughly chop the remaining Oreos and toss with 2 tbsp flour.
Cream the butter in the bowl of a stand mixer until light and fluffy. Beat in the milk and vanilla.
Sift the flour, baking powder, and salt together into the butter mixture. Stir a few times, then mix in the sugar and beat with the mixer on low for about 30 seconds. Add the egg whites. Turn the speed up to medium and beat for two minutes. Fold in the roughly chopped cookies
Divide the batter evenly among the prepared pans and bake for about 18 minutes or until a toothpick inserted in the center of cupcakes comes out clean. Cool cupcakes in the pan for 10 minutes before transferring them to a wire rack to cool completely.
Frosting
I think we changed the recipe a bit to include cream cheese…correct me if this sucks
- 4oz cream cheese
- 1/2 stick of butter softened
- Oreo Crumbles from eariler
- 2-4 cups powdered sugar
- 1 tsp vanilla
To make the frosting, beat the butter, cream cheese powdered sugar, and vanilla in the bowl of a stand mixer until it has a smooth, spreadable consistency. Add the Oreo crumbs and mix well. Put in a piping bag and pipe onto the cooled cupcakes, then top with half a filling-less cookie.
You have some amazing cupcake recipes that have me scrammbling to make them. Very nice cupcake recipe again and I am DEFINITELY making these.

I’m so glad you’re continuing to bake and blog. I went home for the holidays to Lawrence, KS, and when my mom saw me she said, “Toddy, you’ve gained weight.” I went into the bathroom and weighed myself and she was right-I had gained 22 lbs.
I’m guessing that you’re guessing that I’m thinking that the extra weight is due to your cupcakes. Fear not. It turns out I have a latent thyroid condition that coincidentally flared up during cupcake month.
At the doctor’s office, I saw a copy of Good Housekeeping on an end table and picked it up. Turns out it was the “holiday baking” issue. I leafed through it and saw several recipes for cupcakes. I have to say the Good Housekeeping cupcakes did not appear to hold a match to yours. There were some real shit bags in there. I actually vomited at one of the recipes, which asked for orange rinds and cottage cheese (it turns out one of the symptoms of my latent thyroid condition is sudden intense vomiting but whatever.)
So, my doctor prescribed me with a medication that causes nausea, and this severely effects my appetite. The vomiting has subsided though, which is nice. And I’ve actually lost about 6 lbs.! Once my appetite returns, I’m gonna go shithouse on your newest cupcakes. Fuck Good Housekeeping, btw.

Having serious issues making these. I have screamed the f-word several times and am positive that I have crazy eyes right now. intervention needed
