Boo! I made cupcakes. Pumpkin Apple Crisp.


Yep, its been an obnoxiously long time. But have no fear, I couldn’t resist passing up Halloween Cupcakes.  These guys are a freak of nature, combining Pumpkin AND apple crisp. I know, crazy.  They came out pretty darn good.

Pumpkin Apple Crisp Cupcakes

Batter

  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup sugar
  • 1/2 cup unsalted butter melted and cooled slightly
  • 2 eggs
  • 1/2 tsp vanilla
  • 1/2 cup pumpkin pie mix (or pureed pumpkin, but this has some spices in it.
  • 1 granny smith apple peeled and diced

Streusel

  • 3/4 cup packed light brown sugar
  • 1 tsp ground cinnamon
  • 3 tbsp unsalted butter room temp
  • Pinch of salt

In a small bowl mix flour, baking powder and salt

In a stand mixer, mix together sugar, butter, eggs and vanilla until smooth. Mix in pumpkin and flour mixture until smooth.  Stir in the apple.

In a bowl whisk together brown sugar and cinnamon. Add butter and knead in with your fingers until its all crumbly.

Scoop about half the batter into cups, sprinkle the streusel over then cover with the remaining batter.

Bake for 25 minutes and let cool.

Frosting

  • 4 oz cream cheese
  • 1/2 cup unsalted butter
  • pinch of salt
  • 2 cups powdered sugar
  • 1/2 tsp vanilla

Mix it all together until light and fluffy.  About 5 minutes.
